Delicious Black Bean Tacos

At times we just want a simple meatless taco. Delicious Black Bean Tacos is easy to make, full of flavor, and has great crunch. These tacos are another meal that is great to have in your recipe box and makes everyone happy. Finally, with out further delay here is the recipe for these amazing tacos.

Black Bean Taco Recipe

Ingredients

  • 3 Cups of Black Bean Taco Filling, *** Black Bean Filling Recipe At Bottom.
  • 1 Cup of Shredded Cheese, we use sharp cheddar
  • 12 White Corn Tortillas
  • 2 Tbsps. Vegetable oil, separated.

Directions

Firstly, heat some oil at, medium heat, in a large skillet. After oil is hot, warm up tortillas till they are easy to fold without breaking.

Secondly, put some bean filling about 1/4 cup and top with cheese.

Thirdly, fry taco on both sides for 3-4 minutes till nice and crunchy. Carefully take out tacos and lay on paper towel lined plate to drain.

Finally, when all delicious black bean tacos are done enjoy with any sauce desired. It should be noted that once you eat one it is hard not to eat many many more.

Black Bean Filling

Ingredients

  • 2 tablespoons olive oil
  • 2 teaspoons minced garlic
  • 2 teaspoons taco seasoning
  • 1/2 teaspoon onion powder
  • 2 15.5 oz cans black beans, rinsed and drained
  • 5.5 fluid ounces (about 2/3 cup) tomato juice
  • 1/2 teaspoon salt
  • 1/4 cup fresh chopped cilantro

Directions

Firstly, heat oil in at medium high in a skillet that is non stick.

Secondly, add in garlic, taco seasoning, onion powder for 2 minutes.

Thirdly, add beans, juice, and salt. Cook for about 10 minutes or till the juice has evaporated.

Finally, fold in cilantro and your ready to use for Delicious Black Bean Tacos or as a side dish.

It is quick to set in Crockpot and go do errands till dinner time. This recipes is easy to modify as well to your family’s taste. So without further delay here is Zesty Crockpot Chicken Tacos.

Chicken Tacos Recipe

Ingredients

  • 3 – 4 Chicken Breast, skinless and boneless
  • 1 envelope of Taco Seasoning, your choice
  • 1/2 – 1 jar of Salsa, your choice of flavor
  • 12 – 24 Taco Shells, crunchy or soft, warmed according to package
  • Toppings of your choice; example: avocado, sour cream, Pico de Gallo, lettuce, etc.

Instructions

For easy clean up line Crockpot with liners. Then place chicken breast in bottom. Sprinkle taco seasoning over chicken breast, then top with salsa. Cook on high for 3 – 4 hours or on low for 6 – 8 hours. When finish put into taco shells and serve with toppings and sides.

Taco Stuffed Bell Peppers

So I tried this recipe the other night and my family loved it. So here is a delicious family main dish that is Keto friendly and tasty as well. Without further adieu here is the recipe for Taco Stuffed Bell Peppers.

Taco Stuffed Bell Pepper Recipe

Ingredients

4 bell peppers of any color, cut in half length wise

1/4 cup of water

1 1/2 – 2 pounds of ground beef, turkey, or chicken

1-2 packets of taco seasoning

1 1/2 cups of shredded cheddar cheese

1/2 cup sour cream

1 cup of salsa

Instructions

After cutting bell pepper and taken seeds out of them, put them in a microwave safe container with 1/4 cup of water. Microwave for 10 minutes or until peppers get to desired tenderness. While microwaving peppers, brown the ground meat till no pink is left. Then add taco seasoning to meat and follow directions on taco seasoning package. Then stir in 1 cup of shredded cheese, sour cream, and salsa. Put peppers on a parchment paper lined cooking sheet. Stuff peppers with meat mixture, sprinkle tops with remaining cheese, and bake at 350 degrees for 30 minutes. Serve with desired toppings like sliced avocado, sour cream, Pico de Gallo, etc. Enjoy with rice and beans or with a veggie side dish if you want to stay strictly Keto.

Other Suggestions

There will most likely be left over taco meat that you couldn’t stuff in the peppers. So, you can use that delicious taco filling to put on Doritos or Fritos to make like a Frito pie. You can also use the leftover meat for tacos or stuff other peppers with. Be creative and enjoy.

Delicious Meatball Meal Kids Love

Sometimes it is hard to make a meal that a child will completely eat. But, finally there is a meal I found my son loves to eat. It contains everything he loves. So without further adieu, here is a delicious meatball meal kids love.

Meal: Delicious Meatball Meal Items

  1. Barbeque and Jelly Meatballs
  2. Macaroni and Cheese (Annie’s Four Cheese Mac and Cheese)
  3. Veggies: Steamed Seasoned Broccoli (or any veggie your child loves)

Recipes

Barbeque and Jelly Meatballs
  • Frozen Meatballs (2 pounds)
  • 1 (16 Oz) bottle of Sweet Baby Ray’s Original BBQ Sauce
  • 2 Cups of Grape Jelly

In a crockpot whisk together the BBQ sauce and jelly. Then stir in the meatballs till coated. Cover and cook on high for 3 hours. Enjoy these delicious meatballs on rice, noodles, as a sub, or anyway you like.

Side Dish Recipes:

Here are a few recipes to try if you don’t want to use store bought items for you delicious meatball meal kids love.

Oven Roasted Broccoli
  • 1 pound of broccoli florets (bite size)
  • 2 Tbsp. of EVOO (Extra Virgin Olive Oil)
  • Salt
  • Black Pepper
  • Zest and Juice of a Large Lemon
  • 1/4 cup Parmesan Cheese, grated

Preheat oven to 400 degrees. Toss broccoli in olive oil, salt, and pepper. Then place on a baking sheet that is lined with parchment paper. Bake broccoli for 15 minutes, turning broccoli over half way through baking. Broccoli should be crispy and browned. After baking put broccoli in a bowl then toss with lemon juice, zest, and cheese. Enjoy!

Jalapeno Popper Themed Dinner

So many people love jalapeno poppers and have created many delicious recipes inspired by them. So one night I put together a gorgeous savory meal with a few of these recipes to make a Jalapeno popper themed dinner.

This four items made a colorful and mouthwatering meal. It takes about an hour and half to do but in the end it was worth it. It was a big hit with my family and will definitely be on the menu again soo. You can make all these recipes and divide it up in meal prep containers for lunches or dinners later.

Recipes For Jalapeno Popper Themed Dinner:

Pasta with Grape Tomatoes

1/4 cup of olive oil

1 tsp minced garlic

1 pint of grape tomatoes cut in half (about 2 cups)

1/4 to 1/2 tsp red pepper flakes

salt to taste

1 pound of multi-colored Rotini pasta, cooked and drained

1/2 – 1 cup grated parmesan cheese

2 large torn up basil leaves

Put olive oil and garlic in sauce pan. Cook on medium heat till the garlic is lightly browned then add tomatoes, salt, and pepper flakes. Sauté till tomatoes release juices and are soft, around 5 minutes or so. After the sauce is done pour over the pasta and toss till coated. Then add parmesan cheese and toss one more time. Then enjoy.

Then I paired all of these recipes with a steam bag of crispy sweet corn. The meal was finished. I took the leftovers and packed them into meal prep containers for later. Depending on the size of the chicken breasts in the jalapeno popper chicken I had to cut them in half.

Lovelymomma’s Pinto Beans

I have looked on Pinterest and other sites for a pinto bean recipe. I have found and tried many delicious recipes for them. They are just not what I am looking for in a recipe. I want a simple and easy recipe full of flavor. So I accidentally through trial and error came up with my own. It was a hit with my in-laws when we had a family get-together for a football game. This recipe has only two ingredients outside of water and pinto beans. I hope you find it simple and delicious as well.

Lovelymomma’s Pinto Beans

Ingredients:

2 cups of pinto beans

6-8 cups of water

2 beef bouillon cubes

1/2 tsp – 1 Tbsp. Cajun seasoning or to taste

Rinse and sort your beans. Put them in a big pot with 6-8 cups of water and bring to a boil for 5 minutes. Once they have boiled for one minute cover them and remove from heat. Let them sit for one hour in the boiling water. Once that hour is up drain and rinse beans again. This method is the quick soak method. Return the beans back to the same pot and put 6 – 8 cups of water in with them as well as the bouillon cubes and seasoning. I use 6 cups of water because I do not like a lot of pinto bean juice. Let the beans boil once they get boiling cover and lower heat. Let them cook for 2 – 3 hours or till beans are to your desired tenderness. After they are done enjoy with any meal or by themselves. We love them with some good yummy honey corn bread.

French Dip Crescents

2 packages of refrigerator crescents

10 slices of swiss or provolone

1 pound of sliced roast beef

Instant package of Au Jus sauce

French Dip recipe ready in few minutes. Preheat the oven to 350 degrees. Line a baking pan with parchment or foil. If using foil spray it with non stick cooking spray. Unroll your crescents. For each crescent layer with a slice of beef and a slice of cheese. Then roll the crescents from big end to little then place on a baking pan. After you have all the crescents rolled and on the pan then bake for 15 minutes. While they are baking make your Au Jus sauce according to the package instructions. Then when all is done just enjoy your french dip recipe by dipping in the sauce and having a nice conversation with the family. 

Yummy Scotch Eggs

Trying new recipes are fun and an insight to different cultures, especially if it’s a recipe from another country. It’s a way of trying a different cuisine from some place you want to travel to but can’t. So here is Yummy Scotch Eggs that unlike its name originated from England.

History

So the earliest that this awesome dish’s name was discovered was around about the early 1800’s but as a main dish served with delicious gravy but not with bread crumbs. The bread crumb crust comes later. When the dish was actually created is a bit unknown since as years go by some of the history kind of disappears but I’m not really worried about when it was created. I’m just glad that it was created. 

Now for those who don’t know what Scotch eggs recipe are they are a boiled egg, wrapped in a sausage ball, coated in breadcrumb, and then fried. Now some recipes call for regular or flavored bread crumbs. I used Panko because it gave an awesome crunch to this already great easy dish. Also, even though it calls for regular ground sausage you could switch it up by using different flavors like hot and spicy, sage, maple, or turkey. Don’t be afraid to modify the recipe right off the bat to your liking.  

The recipe takes time to make but, it is worth it. The flavor is enjoyable and the texture is awesome. The family ate the eggs up quickly with Baby Ray’s Secret Sauce. It gave it extra zing to the egg when dipped in it. It is wonderful for lunch. breakfast, on the go snack, or as a picnic dish. Try it and enjoy.

Yummy Scotch Eggs Recipe:

Ingredients:

12 eggs, boiled and peeled

2 pounds of ground breakfast sausage, any flavor you like. 

     Cut into 12 equal pieces.

½ cup of flour

4 eggs, beaten

1 -½ cups of bread crumbs, any flavor

     Or panko crumbs

Vegetable or Canola oil, for frying

Instructions:

Eat oil in a large pan to about medium to medium high heat. Take an egg roll it in flour (will help the sausage stick to the egg). Take a piece of sausage, flatten it in your hand then put the egg in the middle and wrap the sausage around it. Then roll it around in your hand to make it shape like the egg. Roll it in your crumbs and set to the side. Do the same with the other eggs. Then put 3 – 4 in the hot oil and fry to light to medium golden brown on all sides (about 4 minutes on each side). Take them out of oil and set on a paper towel covered plate to drain oil. When all are done serve warm or cool with whatever sauce you like.
